Mom and daughter night

Elf is off tonight with a friend, so Kouryou-chan and I had the evening alone together. I decided that we would do something special with each other, so after we ate dinner (leftovers) we made dessert together. I have a lot of fresh pineapple chunks in the refrigerator, and they need to be used up soon. So, I thought what better way than to make pineapple upside-down cake. I modified the recipe somewhat from one I found on Cooking Light, and it turned out quite wonderful. It cooked while we watched the Bambi DVD, and Kouryou-chan and I yummed up two of them.
